Bruschetta (1 tray of apps)
1 loaf French bread
butter
garlic salt
diced tomatoes
fresh basil
fresh oregano
grated parmesan or asiago cheese

Spread slices of bread with butter and add a sprinkle of garlic powder.  Toast in a 350 degree oven for 10 minutes.  While bread is toasting drain the diced tomatoes, chop fresh oregano and basil. Stir herbs in with tomatoes.  Top each toasted slice with the tomato mixture and a sprinkle of cheese.  Prepare just before serving so the bread stays crispy!  Enjoy!





Asian chicken lettuce wraps (serves 3-4)

Sauce-
1 bottle hoisin sauce
2 TBSP rice vine vinegar
2 TBSP soy sauce
1 TBSP chili garlic sauce
1 tsp sesame oil

Filling-
3 TBSP olive oil
1 med diced onion
1 pound ground chicken or turkey
1 TBSP minced garlic
1 tsp grated fresh ginger
1 can sliced water chestnuts, minced
1/4 c crushed peanuts
1/2 shredded carrot

12 lettuce leaves

Whisk sauce ingredients together and set aside.  In skillet saute onion in olive oil. Add ground meat and cook thoroughly. Drain on paper towels if necessary. To skillet of meat add the rest of the ingredients and 1/2 of the sauce.  Warm thru before serving.  Serve with lettuce leaves and the remaining sauce.
